Cook the noodles: Bring a large pot of water to a boil and cook the soba noodles according to the package instructions. Drain and set aside.

Prepare the sauce: In a wok or large pan, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant. Then, add the XO sauce, soy sauce, Sichuan peppercorns, and dried chili flakes. Stir well and let the sauce simmer for a few minutes to enhance the flavors.

Cook the meat and vegetables: Add the sliced pork or beef to the pan and cook until browned and cooked through. Add the fresh vegetables and sauté until tender, ensuring the vegetables retain some crunch.

Combine the noodles and sauce: Add the cooked noodles to the pan with the sauce and meat. Toss everything together until well-coated in the rich sauce.

Serve: Plate the noodles and top with green onions and an optional drizzle of chili oil for an extra kick.
