Haedam SeafoodBeopseongpo, Korea
Extra-large Korean yellow croaker, salted, twice-dried, and gently smoked with green tea.

What is bori-gulbi?
Korea's most celebrated dried fish, and the story behind its name.
The fish
Gulbi
Salted, sea-dried yellow croaker
Yellow croaker is salted and dried until the flesh turns firm, golden, and rich. For centuries it was the fish Koreans gave to show respect, and it still anchors the table at Chuseok and Seollal.
The name
Bori
Bori means barley
Before refrigerators, families buried dried gulbi in barley to keep it through the warm months. The barley drew out moisture and let the fish mellow, and the name stuck. Beopseongpo in Yeonggwang is Korea's most famous gulbi town, and it is where our bori-gulbi comes from.

Haedam's way
Extra-large and ready to heat
Haedam salts and twice-dries extra-large croakers, then finishes them with a gentle green tea smoke. Each fish is gutted and frozen in its own pack, so there is nothing to clean. Just heat and eat.

How to enjoy it
The classic way is with rice and chilled green tea. Here is how we do it at home.
1
Thaw
Move it to the fridge the night before and let it thaw in its pack.
2
Heat
Microwave it covered for about 3 minutes, or warm it in a pan or air fryer until hot all the way through.
3
Pick
Peel back the skin and pull the flesh off the bone in thick, chewy flakes.
4
Eat
Spoon rice into a bowl of chilled green tea and top each bite with a piece of fish. The tea softens the salt and keeps every bite clean.
