Yesodam Mugeunji, Aged Kimchi (400g)

Yesodam · Mugeunji · Aged Napa Cabbage Kimchi · Korea Kimchi Award 7-Time Winner · 400g

Yesodam Mugeunji,
Deeply aged, mellow, and made for cooking.

Mugeunji (묵은지) is napa cabbage kimchi that has been aged far longer than everyday kimchi, until its sharpness softens into a deep, rounded sourness and rich savory flavor. It is the secret behind the best kimchi jjigae and braised kimchi dishes in Korea, where fresh kimchi simply cannot deliver the same depth. Yesodam's mugeunji is made with Korean-grown napa cabbage and its special house broth (특제육수), aged to bring out a mellow tang that shines when cooked.
