Pogi kimchi (포기김치) is the kimchi most Koreans grew up with: whole heads of napa cabbage, seasoned leaf by leaf and left intact to ferment. Yesodam makes it with Korean-grown napa cabbage and Korean salt, then finishes it with its special house broth (특제육수) for a clean, refreshing central-region (jungbu) style flavor that is neither too salty nor too sweet. Keeping the head whole protects the crunch and lets the kimchi ripen evenly, so you simply slice off what you need.
