A5 Japanese Wagyu Chuck Flap Block 0.4LB
Details
A5 Japanese Wagyu · Chuck Flap (Zabuton) · Whole Block
A5 Japanese Wagyu Chuck Flap Block, 0.4 lb,
Zabuton, Cut Your Way
The chuck flap (살치살), known in Japan as zabuton, meaning cushion, for its flat and squarish shape, is one of the most prized yakiniku cuts from the shoulder. It sits in a part of the chuck that does very little work, so the muscle fibers stay fine and the marbling spreads evenly through the meat. The result is a tenderness and buttery richness that rivals loin cuts, with a deeper, beefier flavor. This 0.4 lb A5 block from Japanese Black cattle (Kuroge Washu, 흑모와규) is left whole so you can cut it exactly how you like it: thick steak cubes, yakiniku slices, or paper-thin shabu-shabu.
Why You'll Love It
- ✦ A5 Japanese Wagyu, the highest grade awarded by the Japan Meat Grading Association
- ✦ Zabuton (chuck flap), a yakiniku favorite known for its even marbling, rich umami, and buttery sweetness
- ✦ Whole, unsliced block, total freedom to portion it as steak, yakiniku, or hot pot slices
- ✦ Approachable A5, an easy way to experience the top grade of Japanese Wagyu at home
What A5 Means
In Japan, every Wagyu carcass is graded by the Japan Meat Grading Association (JMGA) on two scales: yield grade (A to C) and meat quality grade (1 to 5), which looks at marbling, meat color and brightness, firmness and texture, and fat color and quality. A5 is the top of both scales and requires a Beef Marbling Standard (BMS) score of 8 to 12. Only beef raised and graded in Japan can carry the A5 grade.
Ways to Enjoy
- ✦ Yakiniku, sliced about 1/4 inch thick against the grain and grilled over medium heat, flipping once when juices rise to the surface
- ✦ Cubed steak, cut into 1 inch cubes and seared quickly on all sides, finished with sea salt and fresh wasabi
- ✦ Shabu-shabu, sliced paper thin and swished in simmering kelp broth for 20 to 30 seconds, then dipped in sesame or ponzu sauce
Tip: Slice the block while it is still slightly frozen for cleaner, thinner cuts.
How to Thaw
Thaw overnight in the refrigerator, still in the vacuum seal. Slice to your preferred thickness, then let rest at room temperature for 15 to 20 minutes before cooking. Do not thaw in water.
