A5 Japanese Wagyu Petite Ribeye Steak, 0.4 lb,
The Classic Steak Cut at Its Richest
Ribeye (꽃등심) is the cut most people picture when they think of a marbled steak, and at A5 grade from Japanese Black cattle (Kuroge Washu, 흑모와규) it reaches a richness standard beef simply cannot. Fine threads of intramuscular fat run through the entire steak and begin to melt at a low temperature, so every bite is tender, juicy, and deeply savory with a naturally sweet finish. The petite 0.4 lb portion is sized for the way A5 is best enjoyed: seared briefly, sliced, and savored in small, indulgent bites.
Why You'll Love It
- ✦ A5 Japanese Wagyu ribeye, the highest grade awarded by the Japan Meat Grading Association, on the most iconic steak cut
- ✦ Dense, intricate marbling, the fat melts as it cooks and bastes the steak from within for a buttery, melt-in-your-mouth texture
- ✦ Petite 0.4 lb portion, just right for a luxurious solo dinner or a shared tasting for two
- ✦ Natural fat seam, renders into a crisp, caramelized bite when seared over high heat
What A5 Means
In Japan, every Wagyu carcass is graded by the Japan Meat Grading Association (JMGA) on two scales: yield grade (A to C) and meat quality grade (1 to 5), which looks at marbling, meat color and brightness, firmness and texture, and fat color and quality. A5 is the top of both scales and requires a Beef Marbling Standard (BMS) score of 8 to 12. Only beef raised and graded in Japan can carry the A5 grade.
Ways to Enjoy
- ✦ Seared steak, in a pan or on a grill over medium-high heat: about 2 minutes per side for rare (rest 2 minutes), or 3 to 4 minutes per side for medium-rare (rest 4 minutes)
- ✦ Yakiniku, sliced thin and grilled briefly on a tabletop grill, then dipped in sea salt or a light sauce
- ✦ Sukiyaki, thinly sliced and simmered in a sweet soy and mirin broth, then dipped in raw egg
Tip: Use very little oil. A5 fat renders quickly, so a hot pan and a pinch of salt are all you need. Test doneness by pressing the center: soft means rare, firm means medium.
How to Thaw
Thaw overnight in the refrigerator, still in the vacuum seal. Remove from packaging and bring to room temperature for 15 to 20 minutes before cooking. Do not thaw in water.
